The health of livestock and healthiness of meats are absolute constraints in the sector. International bodies, European and national public authorities, company specifications and the uses of the sector’s professions establish strict rules that regulate exchanges, trade, processing and marketing and sales. The proper application and monitoring of the measures in force are handled by the French General Directorate of Veterinary Services and the General Directorate for Competition Policy, Consumer Affairs and Fraud Control.
