Definitions

A protein is a biological macromolecule composed of one or more chains of amino acids linked together by peptide bonds. The literature indicates that muscle fibers with their supporting connective tissue (rich in collagen) represent 86 to 88% of the volume of the muscle. About 65% of this space is occupied by myofibrils, the seat of the contractile activity of the muscle, with different families of proteins: the so-called structural or contractile proteins, the regulatory proteins, the cytoskeleton proteins, the membrane proteins, and the cytoplasmic proteins.
