Metabolic profiles of the organic acids, off-odor, as well as other metabolic compounds or substrates (e.g. glucose, etc) of foods can be determined by HPLC. The HPLC system consists of a JASCO LC-Net II/ADC system controller, a JASCO AS-2055 Plus Autosampler with a Model PU-980 Intelligent pump, a Model LG-980-02 ternary gradient unit pump and different types of detectors (e.g. MD-910 multiwavelength detector), while the appropriate type of column is used for the determination of different metabolites/compounds. The software used for spectra collection and processing is Jasco Chrompass Chromatography Data system v1.7.403.1.
